Kabsa With Fried Chicken/ How to Make Kabssa/ Kabssa/ Kabsa


In this blog you will learn how to make Arabian chicken kabsa at home, Kabsa is the national dish of Saudi Arabia. It is a dish made of rice and Chicken, cooked either separately or together. It can be made with spices and camel meat, lamb, or chicken. It is usually eaten for lunch and for dinner. Saudi’s also like to eat kabsa with whole lamb on the bed of kabssa rice on their special occasions like eid, weddings or other festivals. It is their traditional food. Here is the authentic recipe, hope you like it. Here I made it with fried chicken.

 

 

 

Recipe of Kabssa

Ingredients:

For chicken stock:

Chicken           1 kg

Onion  1 whole

Tomatoes        2 whole

Garlic              1 whole

Water as needed ( to take the stock out, or we will use it double the quantity of rice)

Salt 1 Tsp for 1 glass rice (1 glass = 250 ml) salt should be on a bit stronger side.

Black cardamom        1 whole

Cinamon stick             1”

Black pepper   ½ tsp whole

           

Bring all ingredients to boil till the chicken tenders.

 

For rice:

Rice     3 glasses (750 gms)

Onion chopped           2 medium

Tomatoes        2 medium pureed + tomatoes taken out from stock

Garlic 2-3cloves

Salt                              Adjust according to the taste (as we added in the stock as well)

Red chilli powder        ½ tsp

All spices powder        1 tbsp

Dry coriander powder 1 tbsp

Tomato paste  2 tbsp

Chicken Stock …..double quantity of the rice. If 3 glass rice add 6 glasses of stock.

Oil        ¾ cup

 

Instructions:

Saute the onion in the oil.

Add pureed tomatoes with garlic.

Add spices. (salt, red chili powder, dry coriander powder, all spices, tomato paste)

Stir the maslah well, till the oil comes on the top.




Add stock.

When the stock starts to boil add soaked rice (soak rice before an hour)

Add whole green chilies.

Put on dum when water reduces as shown in the video.

 







 

Ready

 

 

Batter for fried chicken:

Eggs: 2 beaten

Salt ½ tsp

Black pepper ½ tsp

Cornflour 2 tbsp

Garlic clove     1

 Beat all ingredients well. Coat on the chicken and fry on very hot flame just to give colour on the chicken)

 

 

 

Serve on the top of the rice with special kabsa sauce.
